  • 1 cup frozen corn (or canned, drained)
  • 2 cups cooked shredded chicken (rotisserie, leftover, or poached)
  • 4 oz cream cheese, cubed (use up to 6 oz for extra creamy)
  • 1 to 2 tablespoons lime juice (about 1 lime)

Optional, for thickening

  • 2 tablespoons masa harina, whisked with 1/4 cup warm water

Step-by-step

1) Build the flavor base

Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion (and bell pepper if using) and cook 4 to 6 minutes, stirring occasionally, until softened.

5) Brighten and season

Stir in lime juice. Taste, then add more salt, lime, or chili powder as needed.

If you want it thicker, whisk in the masa harina slurry and simmer 2 more minutes.
